A perfect smoothie to start Mother’s Day

Yesterday we brought you a recipe for our ‘MacNean Special Porridge with Honey and Irish Mist.’

Today we are going for an equally fun recipe, and again this is a great way to get the kids involved in the kitchen.

A light and fresh smoothie is a lovely way to start the day, and mothers are sure to love it. And it is a great way to get kids to enjoy fruit in a different way.

Here I have chosen a ‘Red Berry Smoothie’ as the perfect Mother’s Day smoothie.

I normally use frozen berries straight from the freezer so that you don’t have to use any ice cubes.

The following ingredients makes about 2 pints of smoothie.

Ingredients:

225g (8oz) fresh or frozen berries (such as a mixture of strawberries, raspberries, red currants and tayberries)

2 bananas peeled

275g (10 oz) natural yoghurt

600ml (1pint) raspberry and cranberry juice

handful of ice cubes (optional)

METHOD:

Place the berries and bananas in a liquidiser with the yoghurt and juice. Process for one minute, until smooth. Alternatively, you can put everything into a large measuring jug and blend with a hand held blender, moving it up and down, until smooth.

Half fill tall glass with ice cubes, if using, and pour in the red berry smoothie to serve.
