It has been a busy week so far, but a very enjoyable one. On Tuesday night I had a great cookery demonstration for ‘First 1000 Days’. This is a great initiative and both myself and Amelda are delighted to be ambassadors. The campaign is aimed at raising awareness and providing practical help on cooking, eating and nutrition during those first crucial 1000 days from conception to two years old.
As parents of two year old twins myself and Amelda know how difficult it can be to get the time to cook. For this reason it is great to get involved with this initiative and provide some quick, nutritious and most importantly delicious recipes for expectant mums, parents and family members. There is a wealth of information as well as a great free cookbook available on the ‘First 1000 days website’
The demo was great fun on Tuesday night. We met some great people and hopefully passed on some great tips and at the bottom of this post you will find a video of a simple chicken curry that all the family can enjoy.
It was also lovely to see the RTE guide giving this campaign a great plug in this weeks edition. And there were some lovely photos of the twins and Amelda as well. I was there too but will let you make your own mind up about how I was looking!
