Quick and tasty Fajitas and Monster Cookie Ice Cream Sandwiches!

Everyone knows how important I think it is to get kids involved in cooking. Well, one of the recipes I am sharing today I know will have them running to the kitchen to help. The Monster Cookie Ice Cream Sandwiches are a massive hit with the little people in the house; and I can bet that some bigger people will enjoy them too. I am also sharing a beautiful dish of Sizzling Steak Fajitas with Tomato Salsa and Guacamole. I hope you enjoy these recipes. I think they are perfect for family gatherings, especially as the weather gets better; fingers crossed for that! I would love to hear how they went down with the family.

On our restaurant’s Facebook page this week we asked people to choose between a Lemon Meringue Pie and a Raspberry and White Chocolate Pavlova with Lemon and Mint. We were inundated with comments! I was going to pick the winning dessert and share the recipe today in this blog for my Easter feast but there were that many entrants and that many persuasive arguments for both desserts that I am going to share both. I’m also sharing a beautiful recipe for Irish Spring Lamb too. So I hope everyone enjoys Easter and has some fantastic family time and of course enjoys some wonderful food too!

We chatted about so many beautiful dishes and I’m sharing them all with you today. Vanilla Ice Cream anyone?

I hope you enjoyed my latest series on RTE, ‘Neven’s Irish Food Trails’. The last in the series was on last night and if you missed it you can catch it on the RTE Player. I had a great time visiting places all over Ireland and met some wonderful people. Last night I had a go at making my own wine glass, as you can see from the picture, and it was great fun while I also got to taste a beautiful beef dish and some gorgeous Mexican food. I also made some vanilla ice cream. The recipe is below and I am sure that you will enjoy a bowl or two!

Two variations for pancake Tuesday

Everyone loves Pancake Tuesday. It is a great time to get the kids involved in cooking too and can be brilliant fun. I’m going to share two recipes today that are variations of the traditional pancake. One is for a potato and Herb pancake and the other is a gorgeous crepe. The crepes are so light and gorgeous and appeared in my, ‘Nation’s Favourite Food FAST’.  I hope you enjoy.

Vegetable curry anyone?

I hoped you enjoyed my latest Food Trails on RTE. I vistied the spectacular Powerscourt Estate in Co. Wicklow where I met Pamela Walsh and Brett Stephenson of Wicklow Way Wines, Ireland’s first fruit wine producers. I journeyed on to Kilkenny and joined mushroom expert Bill O’Dea on a woodland foraging trip in the Castlecomer Discovery Park.
My final stop was in County Longford and the Viewmount Hotel. Head Chef Gary O’Hanlon showed me a gorgeous dish using Finnebrogue venison.

Back on board the Shannon Princess, I made Vegetable Curry with Fragrant Rice. The recipe is below. I hope you enjoy it as much as I did.
