Vegetable curry anyone?

I hoped you enjoyed my latest Food Trails on RTE. I vistied the spectacular Powerscourt Estate in Co. Wicklow where I met Pamela Walsh and Brett Stephenson of Wicklow Way Wines, Ireland’s first fruit wine producers. I journeyed on to Kilkenny and joined mushroom expert Bill O’Dea on a woodland foraging trip in the Castlecomer Discovery Park.
My final stop was in County Longford and the Viewmount Hotel. Head Chef Gary O’Hanlon showed me a gorgeous dish using Finnebrogue venison.

Back on board the Shannon Princess, I made Vegetable Curry with Fragrant Rice. The recipe is below. I hope you enjoy it as much as I did.

A hearty Irish Stew from my Irish Food Trails

On my latest food trail I visited Abbeyleix, Co. Laois where I me Helen Gee of G’s Gourmet Jams. Helen shared a simple yet scrumptious recipe for raspberry jam, which takes less than half an hour to make – perfect for all home chefs. (You can catch the show on RTE One on Wednesday’s at 7:30 or on the RTE Player.)

I also travelled to Bennettsbridge in Kilkenny to meet one of Ireland’s most renowned potters, Nicholas Mosse (pictured below). It was great seeing the master at work on the potters wheel.

My final stop was to Kilkenny City and the Michelin Star Campagne restaurant. Head Chef Gareth Byrne specialises in the Classic French and he made a delicious Chicken Pithivier, an en croute dish.

Back on board the Shannon Princess I cooked a delicious Irish Stew. The recipe is below and I really think you will like it.

A warm bowl for a cold night!

This Minestrone Soup with Pesto is a perfect solution for a cold night: a warming bowl of this chunky Italian soup. If you don’t want to add pasta, cooked beans or rice also work well and help to make it a satisfying option, which is actually very healthy and nutritious.
